Hong Kong-Style Milk Tea 奶茶

Background:

Hong Kong is known for its milk tea that began due to its British colonial past. The Hong Kong variety is most commonly made with a combination of black tea leaves, with each restaurant/café having their own secret recipe. What makes a Hong Kong-style milk tea so special is that it has a very smooth texture and you can taste a depth in tea flavor. The milk tea is often referred to as pantyhose milk tea (絲襪奶茶) because the tea is poured through a sackcloth (generally a white bag with many small holes) several times, and eventually becomes dyed brown, and looks like a pantyhose.

With time Hong Kong has innovated on the milk tea and there are both traditional and unique ones you can try.

This is the most common method that milk tea is served. It is made with the combination of tea leaves, evaporated milk (shops mostly use the Black and White brand because it leads to smoother milk tea), and then you can add your own sugar. In some cases, the sugar is already added for you.

This variety has the tea, but the evaporated milk and sugar is taken away, and replaced with condensed milk, giving it both the creamy milk flavor and sweetness.

In the above picture, you can see the condensed milk at the bottom of the cup. Don’t forget to mix!

As an alternative to the hot milk tea, you can get it cold. You may request for it to have less ice and/or less sugar.

In order to not dilute the tea flavor when the ice cubes melt, there was a place that used iced cubes that were made out of tea, so that when they melted, it would just add more tea flavor to the drink. They seemed to have stopped making them about 2 years ago.

Traditionally, when ice was less accessible, the milk tea was poured into bottles, such as Coca-Cola bottles, and then placed in the refrigerator. Here you see the milk tea is in a soda bottle.

There are some places that really took into consideration that people may not want their cold milk tea to be diluted by the ice tea cubes. In this case, they take the cup or bottle and put it in a bowl of ice to keep the milk tea cold.

    Do you know where the Black and White Milk Tea Cups could be purchased? I’ve been scouring the net, trying to find a place to get it.

    1. We had to search high and low for them also, but we’ve only been able to find them during Black and White’s 75th Anniversary promotion last year. Since then, we haven’t really seen them around Hong Kong. It is available on Taobao though 🙂
